Meal time: Cauliflower, white bean, and feta salad

My sister-in-law always has great recipes and recently when I was looking for a light, gluten free lunch option I asked her for ideas. She recommended this:

She shared that she found it on Designer Bags and Dirty Diapers fyi:) I made it and ate it for the next 3 days, it was delicious.

1/3 cup olive oil
1 teaspoon minced rosemary (I used fresh)
2 Tbsp lemon juice
1 Tbsp red wine vinegar
2 1/2 teaspoons lemon peel
1/1/2 teaspoons salt
1/2 teaspoon pepper
chopped cauliflower (I used a whole head and recommend a very small chop)
1 can white beans drained
2 heads endive, chopped
1 Tbsp chives
2 teaspoons fresh chopped parsley
1/2 cup feta (or more:)

Combine oil and rosemary in pan and let simmer.  Whisk vinegar, lemon juice, lemon peel, salt, pepper in a bowl. Combine cauliflower, beans, endive, parsley, chives, and rosemary oil in large bowl. Mix in feta. Add lemon juice mixture and toss to coat. Enjoy!

Also, I'm not much into meal planning but after spending 6 million dollars at 2 grocery stores yesterday (thank you Whole Foods) I decided it might be a good idea. I'm going to try to post them weekly, we'll see how long it lasts!

{plan for the week}

M: Turkey bacon BLT's, salad and chips (soccer night, has to be easy)
Tu: Chicken stir fry with red/green peppers, onions and quinoa or brown rice
W: going out
Th: Pad Thai or crock pot chicken enchiladas
F: grill out

P.S. On a complete side note, please vote for my friend Shanna, she's in the running to be a Wallis fashion ambassador (hope I said that right:) and she has been so sweet and supportive of my blog that I wanted to pass this along for her! Here's the link, you just have to like their FB page. Thanks y'all!
