She shared that she found it on Designer Bags and Dirty Diapers fyi:) I made it and ate it for the next 3 days, it was delicious.
1/3 cup olive oil
1 teaspoon minced rosemary (I used fresh)
2 Tbsp lemon juice
1 Tbsp red wine vinegar
2 1/2 teaspoons lemon peel
1/1/2 teaspoons salt
1/2 teaspoon pepper
chopped cauliflower (I used a whole head and recommend a very small chop)
1 can white beans drained
2 heads endive, chopped
1 Tbsp chives
2 teaspoons fresh chopped parsley
1/2 cup feta (or more:)
Combine oil and rosemary in pan and let simmer. Whisk vinegar, lemon juice, lemon peel, salt, pepper in a bowl. Combine cauliflower, beans, endive, parsley, chives, and rosemary oil in large bowl. Mix in feta. Add lemon juice mixture and toss to coat. Enjoy!
Also, I'm not much into meal planning but after spending 6 million dollars at 2 grocery stores yesterday (thank you Whole Foods) I decided it might be a good idea. I'm going to try to post them weekly, we'll see how long it lasts!

Tu: Chicken stir fry with red/green peppers, onions and quinoa or brown rice
W: going out
Th: Pad Thai or crock pot chicken enchiladas
F: grill out

Yum!! I'm definitely going to try this recipe! Have you ever made mashed cauliflower instead of potatoes? I've heard it is great and want to try it. Let me know how your meal planning goes. We do it partially and it really does help with grocery costs.
