For the record I know I'm a terrible food photographer.
Here's the original recipe...
And here's my adaptation:)
3 jalapeno peppers
1 Tbsp chive and onion cream cheese
thinly sliced tomatoes
sliced extra sharp white cheddar (or whatever cheese you like)
sliced American cheese
Butter
Bread (I used white, Mr. C hates wheat bread)
Roast the jalapenos. I did mine on the grill but you can use your stove element too. When they are nicely charred on all sides, remove and put in a bowl covered in saran wrap or throw them in a ziplock bag. Wait a few minutes, peel the skins off, and remove the seeds and spines.
Spread cream cheese on one slice of bread and lay out the jalapenos. Top with a slice of cheddar, then tomatoes, then a slice of American. Butter the outside of the bread and cook in a pan on medium until golden. Flip carefully. Slice it (diagonally if you're like me) and eat it:) It's delicious!
